“Unlike many other high-heat oils, Acala Farms PURE Cottonseed Oil is flavor-neutral, thus leaving no residual flavors or smells while cooking with cast iron grates.”

Why Cottonseed Oil for Seasoning ManGrates
We researched and tested a broad variety of oils and methods for seasoning our raw cast iron grates. Once we discovered Acala Farms Pure Cottonseed Oil, we knew we had found the official seasoning oil for our grates. Acala Farms is an American company, and in addition to their plain cottonseed oil (which we tested for seasoning ManGrates), they were the first to introduce flavor-infused cottonseed oils to the public. We were also intrigued that professional chefs and kitchens have been using cottonseed oil more and more. But why?
Cotton has long been grown and regulated as a food crop in the United States. And cottonseed oil has long been a staple ingredient in common food products—from mayonnaise and salad dressings to ice cream, hot dogs and potato chips. At one time cottonseed oil found its way into pretty much every pantry in America as the popular cooking and baking ingredient, Crisco®. CRISCO is actually an acronym for Crystallized Cottonseed Oil, the oil from which it was originally produced. During WWII cotton became a highly treasured commodity for use in the war effort, too precious for use as food, so oil alternatives—soybean oil, and hydrogenated palm oil, among other things—replaced cottonseed oil in Crisco and cottonseed oil fell out of favor in America’s kitchens.
In 2012 Acala Farms introduced a new generation of cottonseed oil that is not just free of cholesterol and trans fat, but also certified pesticide-free, rich in antioxidants and gluten-free; it’s 100% pure cottonseed oil.
Cottonseed oil has a high smoke point, which means that Acala Farms oils won’t burn, scorch or disappear in the pan, so they’re great for frying, searing, sauteing and stir-frying. But this also makes cottonseed oil perfect for seasoning our grates, because grill temperatures can reach 500 degrees. And there is no scorching or degradation of the oil—thereby sealing the pores of the iron efficiently. Cottonseed oil has a naturally long shelf life without the use of any hydrogenation or chemicals.
